Abstract: Indians are fond of sweets and there are many varieties of sweet preparations. Sweets are eaten round the year and their consumption goes up during festivals and religious and social functions and ceremonies. Certain items are eaten fresh and hot whereas items like rosogolla, gulab-jamun, rasamalai etc. can be canned as well. This note primarily considers canned rosogollas but the promoters can work out a judicious product mix.
