| Abstract: | Mango Jelly manufacturing is a traditional mango based sweet from Andhra Pradesh. At present mango jelly is produced through the conventional drying process involving spreading of mango pulp in layers, one after another for about 25 to 30 days in an open area. The product produced is exposed to dust, insects and flies thereby affecting the quality of the product. |
