Abstract: | Milk, as a highly nutritive drink, has today become indispensable for our daily living, and its demand continues to increase steadily from year to year for consumption by general households, hospitals and schools. Milk available on the market may be obtained in the form of plain milk that is simply pasteurized, processed milk that is added with vitamins, minerals or other nutrients, or in a mixture with fruit juice, coffee, chocolate or other ingredients. Whatever the form in which milk is available, the basic processes involved in its preparation are generally the same, the essential difference lying in the processes preceding pasteurization. |
