Abstract: | Preservation of foodstuffs has been conceived as an art of living ever since the dawn of human history. At present, various methods of preserving food can be cited, such as canning, refrigeration, drying, salt-pickling, sugarpreservation and smoking. However, from the viewpoint of preservation, transportation, sanitation and economy, canned food can be said to be the most ideal as compared with food prepared by other methods. |
