dc.description.abstractFor many years starch and starch containing materials have been converted by means of high temperatures in the presence of catalysts into soluble sweet products. Early in the last century it was discovered that, if potato starch slurry is treated with acid, a sweet tasting syrup was produced, from which dextrose crystallized. Since that time starch production from amylaceous raw materials and starch processing into high-quality starch derivatives has made enormous technological progress, especially over the past thirty years.en_US
