Abstract: Pineapples are an important export product in many countries and well liked as a delicacy in those countries that do not have a warm climate the year round and therefore are less fortunate in their fruit-supply. Pineapples are a favourite fruit anywhere and appreciated in many ways: for desserts, fruit salads, in cakes, certain dishes, dried and candied and as stimulating drinks. The first commercial culture of pineapples began about 1850 on the Azores which still are one of the main producers of fresh fruits. Commercial canning was started in Florida, USA, in 1871, but the first real development along the line was in Malaya in 1898. Today 90 per cent of the total pineapple production is available on the market as canned fruit.
