Abstract: From the early times of mankind bread has been a basic food in many parts of the world. When people started to turn their backs to labourious farmlife and started instead life in settlements that were to develop into cities, it was the baker's trade that provided them with bread. Nowadays the manufacture of various sorts of bread - there are more than 200 sorts of bread available on the market in Germany for instance - is only one of the activities in a modern bakery, and the manufacture of confectionery is just as important.
