Cold storages in India preserve agricultural produce at low temperature from one day to several months. Refrigerated storage helps in increasing shelf life of agricultural produce. Generally, edible products are not stored for more than one year The potato storage dominates cold storage use in Gujarat as well as India. There isscope for storing a variety of such vegetables as beans, cauliflower, carrot, cucumber and lime and such herbs as green chillie, turmeric and coriander.
