Abstract:
Cheese is the product made from the curd obtained from whole or skimmed milk, with or without
added cream, by coagulating the casein and further treatment, of the separated curd by ripening
ferments, special molds or seasoning. Preparation of different types of paneer such as surti
paneer, bandal and Ducca Cheese, which are popular in certain parts of the country are allied to
cheese.
Processed cheese is generally prepared from natural cheese having different varieties with
different moisture content.
